About

From the bark to your door.

Singha Foods sells Cinnamomum verum, peeled and rolled by hand in southern Sri Lanka. Never cassia, never blended. Alongside it: pepper, cloves, mace, nutmeg, cardamom and turmeric.

Retail orders ship worldwide. Importers, distributors, private label brands and food manufacturers buy in bulk.

The cinnamon grows in the coastal belt of the Southern Province, where light sandy soil, salt air and steady humidity give a fine, pliable inner bark. In Singha’s words: the place is part of the specification.

Singha Foods has worked with local growers for more than two decades, buying from the same growers and peelers season after season and agreeing prices with them directly.

  • Hand-rolled
  • Naturally sun-dried
  • No additives
  • Sealed at source

Why it matters

Grades

Graded by the quill.

Quills are graded by diameter. Only a small share of any harvest reaches Alba.

Alba · up to 6 mm
C5 · up to 13 mm
C4 · up to 16 mm
H1 · up to 19 mm
H2 · widest quill

Process

From tree to pack.

  1. A peeler rolling cinnamon quills at an outdoor bench in Galle01

    Peel

Shoots are cut in the early morning and worked in the shade within hours. The outer bark is scraped away and the inner bark lifted by hand with a brass rod, never steel, so the bark is not stained. This step has never been mechanised.

  2. A cinnamon peeler rolling inner bark into quills by hand02

    Roll

The strips are nested and rolled by hand into long quills.

  3. Cinnamon quills drying on open air racks in Galle03

    Dry

Quills rest in the shade for a day, then dry on raised racks in open air and low sun for several days. Nothing is kiln forced and nothing is treated.

  4. Hands sorting bundles of cinnamon quills by diameter04

    Grade and pack

Quills are cut to length, sorted by diameter into Alba, C5, C4, H1 and H2, then weighed and sealed at source in Galle.

Quality

Quality on every lot.

Purity

Every lot is confirmed as Cinnamomum verum and kept apart from cassia.

Moisture

Bark is dried to a stable moisture level before cutting and packing.

Flavour and aroma

Lots are smelled and tasted before approval. A quill that has lost its top notes is downgraded, never blended into a higher grade.

Clean

Stock is inspected for foreign matter, damaged bark and mould, then packed in a controlled area.

No additives, no anti-caking agents, no fillers. Nothing irradiated or chemically treated.
